Mozzarella, tomato, basil and EVOO, part 2 – The RECIPE!

 Okay, patient Gentle Tiger-ites! Here it is…the recipe of recipes. I am dying to eat this again! I believe the name of this dish is INSALATA CAPRESE…It’s almost Fall and the tomatoes are starting to go south, but we have a grocery bag (paper) full of tomatoes and they MUST be eaten or canned.
