I believe the name of this dish is INSALATA CAPRESE…It’s almost Fall and the tomatoes are starting to go south, but we have a grocery bag (paper) full of tomatoes and they MUST be eaten or canned. I mentioned in the last post that my wife Mindy has this wicked good onion, bacon and walnut with feta salad recipe that she makes occasionally. Well, the other night she made something besides that salad. It was better(?)…I don’t know if the salad we had the other night was better than what I’m about tell you, but that salad is GOOD and so is this one…okay, this salad is super simple to make, cooling and tasty. Adults and kids alike dig this salad. Blueberry Corn Summer Salad…

I’m not a big proponent of cold raw salad, but I eat them occasionally. Well, my wife Mindy found a humdinger of a salad. When she mentioned that it had blueberries and corn in it – I frowned and didn’t think I’d find it all that tasty, but she wanted to try it and she has this onion, bacon and walnut with feta salad that I scarf down whenever she makes it. What To Expect at Gentle Tiger Acupuncture pt. 2

     What do I do here at Gentle Tiger Acupuncture? I do NOT do acupuncture. What? you may be thinking/saying. That’s a bold statemtent considering I have a degree in Oriental Medicine and a license to practice acupuncture in the state of WI (www.drl.wi.gov Lic # 510-055). What I intend is thus: the word “acupuncture” doesn’t convey much ABOUT acupuncture. Usually if it does mean something it’s “NEEDLES”. I understand that feeling intimately, especially with the phobia many of us (yes, I too cannot handle hypodermic needles – eeewwww!) have here in the West with those MASSIVE (I exxagerate, but they FEEL massive!) hypodermic needles that are hollow. – ACK. It makes me naseous if I ponder it too long.
